For our upcoming August Facebook Live wine chat, Passel Estate founder, Wendy will be joined by a very special guest, Francois Mermilliod, one of Singapore’s most renowned chefs and owner of the phenomenal Bar-A-Thym restaurant.

Francois Mermilliod crafts a French Omakase menu which is uniquely inspired by the regional specialties of Southern France and his travels throughout Asia.  Complementing his extraordinary menu at Bar-A-Thym is an equally impressive wine list on which we are very proud to feature.

Mark the date in the diary and visit our Facebook page on Thursday, 6th August at 5:30pm (AWST), for a tasting discussion and guided lesson in food and wine pairing, led by a true artist in the kitchen.  For this wine chat, Wendy and Francois will be opening the Passel Estate 2018 Sauvignon Blanc and the Passel Estate 2016 Passel Estate Cabernet Sauvignon.

The 2018 Passel Estate Sauvignon Blanc was awarded a SILVER MEDAL in the 2020 International Wine Challenge,  92 Points in the 2020 Halliday Wine Companion.  Joe Czerwinski of The Wine Advocate awarded it 90 points, saying:

Attractive scents of snow peas and grapefruit lead the way in the 2018 Passel Estate Sauvignon Blanc. It’s a medium bodied wine, with a fine, silky texture and admirable length, folding in hints of nectarine, tangerine and lime.

The 2016 Passel Estate Cabernet Sauvignon was awarded a SILVER MEDAL in the 2019 Decanter World Wine Awards, 93 Points in The Real Review and 93 points in Ray Jordan’s West Australian Wine Guide.   Jo Czerwinski of The Wine Advocate awarded this wine 90 points, saying:

Thyme and sage accent cassis in the 2016 Passel Estate Cabernet Sauvignon.  This is archetypal Margaret River Cabernet, from its classic flavour profile to the supple, medium-bodied feel on the palate and through to the mouthwatering finish. The oak treatment is subtle, serving just to support and round out the herb and berry flavours.  Nicely done.
