2019 Passel Estate Cabernet Sauvignon

2019 Passel Estate Cabernet Sauvignon

2019 Cabernet Sauvignon

Margaret River, Western Australia

Medium to full bodied with fine-grained tannin, velvety smooth with intense fruit flavours of black and red berries.

From $50.00 per bottle

    Description

Tasting Notes: Ruby red with black hints. A bouquet of violets, red currant and cassis, hints of boysenberries and freshly roasted coffee. An elegant array of red and blue fruits, pristine tannin and succulent acidity introduce a svelte and finely stitched palate. Flavours of cherry blossom, blue berries and cedar dart across deeper undertones of graphite and black currants, whisking off into an utterly pure finish of oyster shell and cracked gravel.

Winemaking Notes: The fruit was harvested, and berries crushed (just split). After a cool 14-day ferment on skins with multiple, yet gentle daily pump overs, the wine was gently separated from the skins and transferred straight to French Oak barriques, 35% of which were new. The wine was matured for 10 months in oak, before being lightly fined, filtered and bottled.

"This was a year that produced beautifully elegant wines of slightly less body, but no less flavour. Loads of leafy blackcurrant aromas with a liberal dose of dark chocolate and edgier black olive. A faint hint of brick dust adds a further level of complexity. The palate is seamlessly woven, with fine sinewy tannins, oak and fruit all laced together. Long palate."

"Leafy aromatics. Just starting to show some secondary characters such as tobacco and pencil box, supported by dark, inky cassis fruits. Chalky fine tannins giving line and shape across the palate with quite chiselled acid – a highlight of the cooler 19 vintage keeping freshness and vigor. Classic Cabernet with plenty of charm."
