Tasting Notes: Aromas of poached plums, black pepper and meat spice introduce a broad and voluptuous palate, dripping in black fruits and coating red tannin. Flavours of rhubarb, all-spice and black berries are persistent through to the finish, savoury and steeped in graphite. Drink now for freshness or be rewarded with cellaring.
Winemaking Notes: Picked in the early hours of the morning, our Shiraz fruit was destemmed directly to the fermentors as whole berries, resulting in slower and more controlled extraction of tannin and greater retention of fruit based aromatics. A cool ferment on skins for 14 days was followed by a gentle pressing straight to barrel. The wine was matured for 10 months in a combination of French Oak barriques and puncheons, 30% of which were new, and underwent bâttonage every 5-6 weeks.

"Passel’s Shiraz 2018 will certainly hold its own! Lovely aromatics build anticipation of something joyful. This release has bounteous black fruit then leads to an iodine, mineral finish with fine tannins. Generous by Margaret River standards due to the warmer vintage but you won’t confuse it with Barossa. It’s more tempered. Darn good Shiraz for now or keep it for 10 years if you enjoy some bottle age - this wine will go the distance!”
