A gentle style of shiraz - red plums, black cherries, kirsch, dark chocolate and a hint of white pepper.

    Description

    Tasting Notes: Fresh red plums and white pepper slowly open to reveal aromas of black cherries, kirsch and dark chocolate. Velure textures of cacao and black berries introduce the palate, powerful yet poised, guided by flavours of glazed red cherries and firm and coating tannins. The finish is concentrated and rich, balanced by a diaphanous web of porcelain texture and acidity.

    Winemaking Notes: Picked in the early hours of the morning, our Shiraz fruit was destemmed directly to the fermentors as whole berries, resulting in slower and more controlled extraction of tannin and greater retention of fruit based aromatics. A cool ferment on skins for 14 days was followed by a gentle pressing straight to barrel. The wine was matured for 10 months in a combination of French Oak barriques and puncheons, 30% of which were new, and underwent bâttonage every 5-6 weeks.

    "The wine is still so youthful, with lifted, spiced exotic plums and savoury pepper tones, I am thinking warmed blueberry pie. A medium bodied style with lovely Shiraz spice, green peppercorns and structured chalky tannins. Juicy acid mops up the smoked meats and the finish is fresh and lively."
